Border Straight Bourbon is artisan distilled from grains provided by a 6th generation family farm, minutes from the distillery. No short cuts. We practice traditional aging techniques in medium char, Ozark White Oak barrels constructed from wood staves that are air dried three years. No Blending: only whiskey from our grain and distilled in our pot is put in bottles that carry our name.">
Perfection is a patient man’s game. So we waited until Angel’s Envy reached the perfect level of maturity. We judge only a handful of barrels exceptional enough for our lengthy finishing process. The result? Even at 124.5 proof, every sip is worth savoring.
A remarkably complex and unfiltered spirit, we suggest you enjoy it neat or with just a splash of water to release the flavor nuances, and perhaps with a few friends who appreciate outstanding whiskey. Angel’s Envy Cask Strength was worth waiting for, now it’s worth sharing.
AT EACH BOTTLING we’ll remove a portion of that whiskey and replace it with other barrels that will complement the remaining blend. We'll then repeat the process - bottling a portion and adding newly selected whiskeys each time.

HOW IS THIS DIFFERENT FROM THE SOLERA PROCESS?
The Infinite Barrel contains fractions of many whiskey barrels in a single blend, while a solera ends up with fractions of the original whiskey in many barrels. Our objective is to create a unique blend for every bottling. The solera process, however, is designed to create a consistent product every time.
At its most basic, the solera process starts with a single barrel or group of barrels of a specific age. A fraction of the first group of barrels is put it in the second group of barrels, a fraction of that second group is put in the third group and so on. The solera process is designed and symmetrical. We think of our Infinite Barrel Project as a solera in reverse. It's unpredictable and asymmetrical, constantly evolving - even whimsical. We're certainly having fun blending it.">
We fill these casks with a blend of 6- and 9-year-old Bourbons. The robust flavors from the casks pair well with the spicy high rye content of the Bourbon and create a striking profile unlike any other whiskey in the world.
Belle Meade Bourbon Madeira Cask Finish has been cut to 90.4 proof and, as with all of our products, is never chill-filtered. The result is a Bourbon of particular distinction and uncommon character. Have it neat, with a splash, over a sphere of ice, or create a distinguished twist on your favorite whiskey-based classic cocktail. However you drink it, you'll know you are enjoying a rare spirit made for the discerning whiskey drinker.">
This whisky is the culmination of several years of planning. "For a few years now, we've been putting whisky away for storage," remarked Becky Harris, Chief Distiller and President of Catoctin Creek Distilling Company. "We pulled some of the more interesting barrels from the back of the barn and decided to release these at a higher proof: a whisky specially curated for flavor, while still being remarkably smooth, as is our existing 80 proof Roundstone."

After several years, once our whiskies have developed a robust richness and a mellow golden hue, we taste and assemble the final blend… but instead of going right to bottling, we allow the batch to "rest" a while - a few months or longer, in 225 liter casks made of French oak previously used in the aging of wine. The tighter grain and subtle flavor profile of these older French oak barrels adds a degree of elegance and finesse to the finished whiskey - nothing overpowering, but a layer of stylish complexity that really pulls all the components together.">
On the nose, there is an immediate aroma of fresh multi-grain baked bread and ripened nougat. The midpalate mouthfeel is rounded out with semi-sweet flavors of grilled pineapple and candied walnuts. On the finish, you will find a perfect balance of sweet and savory with cooked peaches and steeped tobacco.">
We confess...we didn't coin the term "Yippee Ki-Yay". Moreover, we didn't paint the picture on the front label. It's an historic poster (Gift of The Coe Foundation and Henry B. Balink) now at the Buffalo Bill Center of the West in Cody, Wyoming (centerofthewest.org, you really ought to visit). Furthermore, we didn't distill the whiskeys in this bottle - it's our Double Rye! However, we did come up with a combination that we think will make you say...Yippee Ki-Yay drinkers of horrible tasting cheap flavored uisge beatha! One day, just for fun, we put Double Rye! into oak barrels that had originally been used to age two different types of wine and discovered an all-natural, not disgustingly-sweet sipper for the rest of us.

Marriage of two straight rye whiskies
The 2-year-old has a mashbill of 95% rye, 5% barley malt from LDI now MGP.
The older rye has a "barely legal" rye mashbill of 53% rye and 37% corn from Barton Distillery.

Nose: Warm baking spices with sweet cinnamon and clove spice, dried thyme, rosemary & desert sage with subtle black berry and cassis

Finish: Dark caramel, currants & raisins, all interwoven with cinnamon / all spice complex
Taste: A big, bold punch of cinnamon spice and blackberries on a foundation of vanilla and caramel, the long finish is dried orange rind and herbs.

The road to Noe Simple Task started when I visited our Canadian distilleries in early 2017. I enjoy travelling to different places in the world to see how they distill their spirits. There, I was able to taste some great Canadian whisky straight out of the barrel. I was really drawn to the fruit and floral notes they achieve. I wanted to know more.
Later in the year I went back for a deeper dive to learn all about their process. And taste some more great whisky. This was a step outside my comfort zone. The rules and laws for making whiskey in Kentucky that I grew up with don’t apply up there. But I came back inspired and began blending.
Now, while the flavors of the Canadian whisky had piqued my interest, my heart still lies in Kentucky. So I was excited about the idea of bringing the best of both worlds together. Knowing I wanted to blend with Kentucky Straight Rye, I started experimenting with different Canadian whiskies, trying to pull in those fruity and floral notes. They use a lot of different barrels to age up there, so I was able to play around with a lot of different flavors. I was looking for something that would round out the blend and really showcase the nuances of both the American and Canadian whiskies. In the end, I found the 40-year-old whisky and 13-year-old rye helped me achieve exactly what I wanted—a truly balanced and refined whiskey with a nice, lingering finish that’s full of flavor.

Maker's 46 is created by taking fully matured Maker's Mark bourbon and placing it in a barrel with ten charred wooden staves (all 46) in it to create more wood influence, more caramel, more... YUM. The whisky is then aged in these modified barrels for an additional three months to maximize the flavor impact of the staves. We love Maker's 46 and so when the opportunity arose to create our own private barrel, we jumped at it. Here's how it works:
in 2017, the folks at Maker's worked with Independent Stave (one of the largest cooperages in the world) to create four new stave types to add to the existing Maker's 46 stave, for a total of five possible staves to fill ten stave positions:
Baked American Pure 2 (P2)
Seared French Cuvee (CU)
Maker's 46 (46)
Roasted French Mocha (MO)
Toasted French Spice (SP)
By arranging these staves in different configurations, you could develop up to 1,001 different whisky variants. We've done a few of these Private Select barrels, and we've been able to craft dramatically different whiskies using different stave configurations.
During a lunch break on our first trip, I saw a bottle of Maker's 46 Cask Strength for sale in the gift shop and inquired- would it be possible to make a barrel using ONLY the Maker’s 46 staves? Since it was to be bottled at barrel proof, this would essentially be Maker’s Mark 46 Cask Strength Bourbon!!!??? The answer was yes. In fact, at the time, that gift shop bottling was the only way you could get Maker's 46 Cask Strength- a distillery only release made at the direction of Bill Samuels Jr. himself!
