The agave fields are located in the highlands of Jalisco at an elevation of 7,000 feet. The cool nights, warm days and iron rich soils provide ideal growing conditions for the agave.
Rosendo Ramirez Senior oversees the harvest and hand selects only the most pristine, mature agaves. Jimadors skillfully remove all of the green leaves down to the heart of the piñas so that only the dense, succulent, sugar-rich core remains. The agaves range in age from six to eight year old.
The piñas are cut into four segments using a proprietary process, then slowly roasted over an open fire to coax out the sweet juice. Distillation takes place in handmade, traditional copper pot stills. The aging is carried out for eight months total with the initial four in charred, new American barrels followed by a light finishing for four months in used Chardonnay barrels from Dave's winery adding a brightness and creaminess to this elegant tequila. Pristine, pure water is sourced from a natural spring located on the farm. The water is used for production and proofing and is of such high quality that it undergoes no filtration at all.
