The fresh grapes were gently handled in the winery by either directly pressing the fruit to achieve delicate fruit flavor or allowing the juice of whole grapes to mingle with the skins for 36 hours and drawing off - "saignée" - the lightly colored juice. Fermentation was kept cold to further preserve the exquisite characteristics of the wine. The wine has a beautiful soft pink color with enticing flavors of strawberry, cranberry, and raspberry. The finish is long and crisp with ample acidity to refresh the palate.
