Uncharted Whiskey is distilled from a malt mash: Whiskey is what beer wants to be when it grows up. Each batch is an adventure. We've partnered with local breweries, and each batch is made from a different beer. It is aged for one year in used oak barrels, and then diluted to 40.6% alcohol by volume. Each batch is unique and different, due to the specialty grains, yeast, and hops.

How do we do this? It's simple. Instead of milling, mashing, and fermenting here like we do for our other grain to glass spirits, we let the brewery do that. Then, we fill up the still with beer! See links to news stories as well as descriptions on the news page.
