Jenever also known as peket, genievre, or genever is the traditional juniper flavored liqour of Belgium and the Netherlands from which gin evolved. Regulations specify that only liqour made in these two countries (as well as two small regions in France & Germany) can be called Jenever. There are two types of jenever oude (old) and jonge (young) which due not refer to the age but instead the distilling technique. Oude must contain at least 15% malt wine, but no more than 20g of sugar per litre and jonge can contain no more than 15% malt wine. Jonge jenever has a nuetral taste, akin to vodka. Oude has a aromatic taste with malty notes.
